The benefits of freshly grinding pepper, salt, herbs, and spices for cooking and seasoning are numerous. A quality mill with a specifically designed grinding mechanism can release the aromas and essential oils of the spice, resulting in more aroma and better flavor than pre-ground options. Another advantage of using freshly ground spices or minerals (salts) is the control a mill provides for determining the coarseness (size) of the grind. When choosing a pepper, salt, or spice grinder, consider the grinding mechanism, design and appearance, and ease of use.
Peugeot's story begins in the 19th century when the Peugeot brothers converted their family's gristmill into a steel foundry. They went on to produce a diverse range of exceptional quality products, including small appliances, bicycles, and most notably, automobiles. In 1840, Peugeot created their burr-style coffee grinder and adapted that design to accommodate peppercorns in 1874. This pepper mechanism design is still used today in every Peugeot pepper mill and is often copied but never equaled.
Today, Peugeot offers six unique spice-specific mechanisms plus the original burr-style coffee grinder, each designed to get the most out of the spices they are intended for. The primary difference between Peugeot and all other brands are these spice-specific mechanisms. Peugeot's Pepper Grinding Mechanism is a two-stage burr-style system that cracks and then grinds the peppercorns, releasing their essential oils and resulting in more flavor and aroma. The Salt Crushing Mechanism features two ribbed plates that fracture and crush coarse, dry sea salt to a consistent size.
Peugeot's patented u'Select grind control system allows users to quickly, easily, and accurately adjust the grind settings, from coarsely ground pepper or salt to very fine, with six pre-defined levels of grind for each. The right grind can be selected based on personal taste and the dish being prepared, with a finer grind used for delicate sauces or raw vegetables and a coarser grind for grilling or heartier dishes.
Peugeot mills are made in France, with PEFC-certified beech wood from sustainably managed French forests and steel mechanisms all made at the Peugeot manufacture. The 2-stage salt grinding mechanism is made of specially treated stainless steel to keep the teeth razor-sharp and protect against corrosion, releasing maximum flavor and aroma. The mills are easy to use, with a comfortable grip and the u'Select ring system for adjusting the grind size. To get the best results, Peugeot recommends using dry rock salt with a maximum diameter of 4 mm (0.16"), and not damp sea salt, which can corrode the mill.
Peugeot offers a lifetime warranty on the mechanism and a 5-year warranty on the body of the mill, ensuring the quality and longevity of their products. With their commitment to innovation and dedication to producing the best grinding mechanisms for spices, Peugeot mills have earned their position as the mills of choice in world-class kitchens.
